Brown Rice Risotto in a Minute®

One Minute Brown Rice Risotto combines Minute® Ready to Serve Rice, who was generous enough to sponsor this post, with just a few pantry ingredients to turn your work lunch or quick last minute meal into something you’ll crave every day! In just 60 seconds, you have a creamy cheesy lemon garlic quick risotto with peas. The easiest part is that you can pack your mix-ins ahead so lunch is as quick as combining the two and microwaving.

Mix-in Ideas for DeLicious Brown Rice Risotto On-The-Go

Here are some extra mix-in ideas for your One Minute Brown Rice Risotto that all start with 2 tablespoons of heavy cream or half and half as the base:

  • corn, black beans, cayenne and jack cheese
  • pesto, grape tomatoes (cut in half you don’t want them to burst in the microwave), fresh mozzarella
  • diced mushrooms, thyme, garlic, Parmesan
  • caramelized onions, pancetta or bacon (cubed), provolone
  • cut shrimp, garlic, frozen spinach (chopped), Parmesan, crushed red peppers

The rule of thumb is try not to add more than 4 or 5 tablespoons of total ingredients to the cups (in addition to the heavy cream). There’s only so much space in the cups.

So Easy, Works Wonders for Lunch

If you don’t have the cups of Minute Rice, you can also use Minute Whole Grain Brown Rice. It cooks in just ten minutes. Portion out a cup of it and mix with the ingredients in a small covered container. When you’re ready for lunch, microwave for one minute uncovered and enjoy your delicious meal!

The “recipe” for One Minute Brown Rice Risotto is almost too easy. Just add all the ingredients into the cup of rice and microwaved uncovered for one minute:

    1. If you’re going to use milk, I recommend melting a little bit of butter in there to help thicken it. Hope this helps!

  1. A tasty sounding recipe, but we’re not all cooking for one! I’ll have to multiply this recipe times 6, in order to have enough.

  2. I don’t care for rice, but I’ll consider buying the Minute Ready to Serve to check it out, because I love peas.

    1. Oooh, that would be a whole different recipe unfortunately. Let me do some recipe testing and get back to you.

  3. This Risotto sounds incredibly delicious! I’d like to serve it as an awesome acompament to chicken. How can I adjust this recipe to make 4 servings, …. if I chose to use “Minute (Instant) Brown Rice”, instead of the pre-cooked rice in a cup?

    1. I would just make the minute rice as directed and combine everything once it’s done. If you hover over the the serving number, you can use the slider tool to adjust to 4 servings and that will give you new ingredient amounts. Hope this helps!

  4. I LOVE these cups – so convenient! This recipe would be perfect for lunch, too.

  5. Hi Sabrina… until now I’m still “afraid” to cook and eat risotto. Both my husband and me still prefer normal pilaf as our dinner. But yours itch me to try to make it too 🙂 looks yummy

  6. I love , love, love risotto! This one looks fantastic, and the green peas so cute, + brown rice, I’m sold !
