Pepperoni Pizza Bites are a cross between a bagel bite and a pizza muffin. Still chewy and savory, but with a softer texture than the prepackaged frozen variety. Since they take less than five minutes to prepare and 25 minutes in the oven, this is a 30 minute meal. Dip them in Marinara Sauce for a delicious juicy bite!  These also work great cold the next day as an easy park lunch!

Now you can avoid the guilt you may feel when you pop some of the pre-made pizza snacks in the oven or microwave knowing they have so many ingredients you can’t even pronounce much less identify.

You can make these Pepperoni Pizza Bites for the little ones in the house as a treat, and they are much healthier with just a few unprocessed ingredients. You can also sneak in some veggies by adding very finely diced red and yellow bell peppers as well as onion or carrots. It is an easy way to get some vegetables into the meal that your kids may otherwise fight against eating.

For the adult taste buds in the house you can try these variations:

  • Skillet browned Canadian bacon and pineapple cubes
  • Crumbled bacon pieces and fresh or dried figs
  • Browned crumbled Italian Sausage with Caramelized Onions
  • Steamed or Roasted Broccoli with chunks of chicken and sautéed garlic

How to Store Pepperoni Pizza Bites

  • Serve: Don’t leave Pepperoni Pizza Bites at room temperature longer than 2 hours.
  • Store: Store in an airtight container or plastic zip top bag in the refrigerator up to 4 days. Reheat in a 375 degree oven for 6-8 minutes.
  • Freeze: Once completely cooled, freeze in a single layer on a baking sheet for 30 minutes, then transfer to a freezer safe plastic bag for 2-3 months. Reheat at 375 degrees for 15-20 minutes.

Pepperoni Pizza Bites

Ingredients
 

  • 3/4 cup flour
  • 3/4 teaspoon baking powder
  • 3/4 cup 2% milk
  • 1 large egg , lightly beaten
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper
  • 1/4 teaspoon salt
  • 1/2 cup mozzarella cheese
  • 1/2 cup Parmesan cheese
  • 4.2 ounces pepperoni , (Half the pouch, cut into little quarters)
  • Marinara Sauce , for dipping

Instructions

  • Preheat the oven to 375 degrees. In one bowl mix milk and eggs, set aside.
  • In a second bowl mix flour, baking powder, salt, Italian seasoning, and crushed red pepper.
  • Combine the wet into the dry ingredients and whisk to combine.
  • Add in the pepperoni and cheese and whisk together.
  • Spray baking spray or canola oil spray onto two mini muffin tins and using 1 tablespoon scoop, fill all 24.
  • Alternately make 12 larger Pepperoni Pizza Bites.
  • Cook for 15 minutes-18 minutes, or until browned.
  • Serve with marinara sauce.

  3. Absolutely great recipe!! My daughter was starting to bring back her lunch kits with one bite out of the sandwhich so she was obviously bored of the whole sandwhich thing. I made these with cut up ham & cheddar and they were a hit for sure, my wife even asked me how to make them which is a big step for her since she usually only has Kraft Dinner in her recipe book haha.

  4. Love your pizza bits. They were a big hit at my church . I am hoping that you might be able to halp me with some other recipes . I know the recipes are not yours but I could not find help anyplace else . I do not drink but the recipes I would like to make for church that children would be eatin call for wine or vodka . what can I put in place of them .

    1. In place of wine, use the broth that best corresponds with the wine – red wine/beef, more beef broth. White wine/chicken or pork – use more chicken broth.

      As far as vodka, I imagine you’re making a vodka sauce? If so use water and a tablespoon or so of white vinegar or lemon juice.

    1. I’ve not tested it that way before but I don’t see why not. Just follow the instructions on the biscuit package for oven temp/time. Enjoy!

  7. great recipe! i didn’t have a cupcake pan so i put the whole thing into a cake pan and it turned out great! one thing is it may take more than 18 minuets to cook, but love it!

    1. I calculated using 1 bite as 1 serving so you could easily calculate how many you wanted to eat. Enjoy!

    1. I wouldn’t, it’ll just make the muffins gummy. Reserve it for dipping. If you want a filling try cutting up string cheese and putting a chunk on top of each one.

    1. If you add it to the batter before cooking it’ll make it mushy, but I definitely dip the baked bites in pizza sauce!

    1. It’s also delicious baked into a springform pan or 2-3 qt baking dish. You’ll have to spoon it out but it’s still delicious.

  9. Will there be a difference if I use whole milk instead of 2% ? I have all the other ingredients except for the milk

        1. In a pinch I’d just do 2 parts oregano, 2 parts basil and 1 part thyme. There are easy more detailed recipes with more ingredients, but this gets you most of the way there.

  10. Hi Sabrina, Just wanted to tell you that I made these Pepperoni Pizza Bites the other night and they were fab. I was just sorry that my son couldn’t try them because he cannot eat meat. So I sautéed up some Baby Bella mushrooms, onion, green pepper and substituted that for the pepperoni. Baked another 3-4 minutes in a muffin tin and they turned out great!

      1. I am (unfortunately) allergic to wheat however this recipe was simple to switch out the wheat flour with one part Almond Meal and one part Bob’s 1 to 1 Baking flour. It was the best thing I’ve made in weeks and I’m planning on making it again tonight! Thank you for this fantastic recipe!

  11. Am I reading this correctly? You mix the flour/dough mixture up, and then add the pepperoni and cheese into the dough mixture directly?

    1. It might slightly change the texture but you should be fine using it. I’d love to know how it turns out if you decide to try.
