The Salted Caramel Chocolate Oreo Bars came about pretty honestly. I had friends coming over for a football game and we needed a dessert. I wanted something chocolatey because my friends LOVE chocolate but I am all about salted caramel these days. I was thinking of making a salted caramel no bake cheesecake tart but when I went to open my giant container of cream cheese I found mold in it! (I only bought it a week ago, boo!) So cheescake all of a sudden was not in the cards.

Enter Salted Caramel Chocolate Oreo Bars. I made the Oreo crust the same way I would for a cheesecake, added the Caramel Sauce from my Ice Cream Burger and covered it in bittersweet chocolate ganache with a sprinkle of Fleur de Sel salt. Sounds complicated right? Nope.

Using a food processor pulverize your Oreo cookies until they are crumbs. Into the top of the food processor pour 1 melted stick of butter (8 tablespoons). Press into the bottom of your springform pan or tart pan. I used a tart pan so it was easy to remove but in hindsight if I had spare time I would make it in a square pan, freeze, remove and cut into perfect squares while frozen.

Put the pan in the freezer while you make the caramel sauce. Add last stick of butter to a saucepan with the brown sugar. Melt them together and let them boil vigorously for a minute. Turn off the heat and add ¼ cup of heavy cream and whisk it together. Pour the caramel onto the frozen pie crust and tilt the pan to cover the crust.

Now my favorite part! In a microwave safe bowl add your chocolate chips and a half a cup of whipping cream. Microwave for one minute.

Let sit for 3 minutes undisturbed then mix until smooth. PURE MAGIC! Pour over the caramel sauce and spread with a spatula. Keep in the refrigerator until ready to serve. Salted Caramel Chocolate Oreo Bars are a chocolate caramel dream, made with just 5 ingredients and they're no bake! Sprinkle the top of the Salted Caramel Chocolate Oreo Bars with flaked sea salt, I love Maldon. I used the round plate because it would be easy to remove but in a perfect world I would’ve had a square tart pan. It worked out well, I kept the edges for myself. 😉

  2. These look absolutely AMAZING! Before I make them, would you please answer a couple of questions? Did you use salted or unsalted butter? After pouring the caramel onto the crust, do you put the pan back into the freezer (prior to pouring the chocolate on top of the caramel)? Thanks so much, Sabrina.   4. These are in my freezer right now waiting for dessert, but I tasted my way through each step of the recipe and could tell these will be amazing! Talk about Oreo fantasy, plus no milk or eggs (I happen to be out), super convenient. Maximum result for a milk-free egg-free dessert if you ask me.

  6. Can this recipe be made with jarred caramel sauce, such as
    Trader Joe’s salted caramel? If so, how much of the 10 ounce jar of prepared sauce would be needed?

    1. Probably not with a jarred sauce since the jarred sauces tend to be thinner. As soon as you took the bars out of the fridge the sauce would ooze out of the sides as soon as it came to room temperature.

  8. Sabrina, this looks like the most decadent dessert I have seen in a while! I just want these bars all to myself! The area and caramel combo is killer! Pinning!

    1. With the caveat that I used store-bought caramel (Ghirardelli), this was way too sweet for our liking. Perhaps if I hadn’t been lazy and made my own caramel it’d have been better, but mine was tough to get through.

      However, night two, it should be noted, eating with some mid-quality whisky it actually was a lot better and more balanced. So there’s always that option.
