Sabrina’s Guinness Chocolate Fudge Recipe

Beer lovers and chocolate lovers alike can come together to enjoy this rich chocolate fudge. Made with just a few ingredients in a couple of steps, this recipe is sure to be a new favorite. You’ll make the smooth chocolate fudge with semisweet and dark chocolate chips, sweetened condensed milk, and Guinness beer. With just those simple ingredients, you get a wonderfully rich fudge with the perfect deep chocolate flavor and silky texture.

Guinness is a famous Irish stout beer, which is why people love using it in recipes around St. Patrick’s Day. The Stout Beer Fudge has a rich malted flavor with a hint of coffee taste. Guinness is also used to make this delicious Chocolate Cake Recipe and the Moistest Brownies ever! If you don’t have Guinness on hand, you can also make this recipe with other dark beers.

Ingredients

  • Semisweet Chocolate: There are three kinds of chocolate in this recipe. The first is the semisweet chocolate chips. They make up the majority of the chocolate fudge flavor and give the perfect rich, sweet, and barely bitter chocolate taste.
  • Dark Chocolate: Along with the semisweet chocolate chips, you’ll also add dark chocolate. There’s a little less dark chocolate in the recipe because it’s not quite as essential of a flavor component. However, they do make the recipe richer
  • Milk: To make the classic fudge, you’ll use sweetened condensed milk. Mix the milk with the melted chocolate to get the perfect creamy fudge consistency. The condensed milk ensures that the fudge sets with a soft texture.
  • Guinness: ½ cup Guinness is plenty to flavor the fudge recipe. Remember that if you don’t have Guinness, you can always use another kind of dark stout.
  • Cocoa Powder: The third element of chocolate comes as an easy topping. Dust the Guinness Fudge with cocoa powder as an easy chocolatey garnish.

Kitchen Tools & Equipment

  • Baking Pan and Aluminum Foil: You need a baking pan lined with foil for your fudge to cool. 8×8 inches is the perfect size. Anything larger will work but your fudge will be thinner in size. The foil makes your fudge lift out of your pan easily, with very little clean up. You can also use parchment paper to make an easy job out of this fudge.
  • Large Microwave-Safe Bowl: You will melt your chocolate in the microwave so use a microwave-safe mixing bowl that is large enough to hold all your chocolate and condensed milk, plus room for stirring.
  • Spatula or Spoon for Stirring: Your hot fudge will need to be stirred well so grab a spoon or better yet, a rubber spatula that will scrape the sides of the bowl really well.
  • Offset Spatula: In order to smooth out the top of your fudge for neat-looking squares once they’re cooled and cut, you’ll need an offset spatula. It is a spatula that is bent at just the right angle to hold comfortably in your hand, yet glide nicely across the top of the liquid fudge.
  • Knife: Grab your favorite kitchen knife to cut the fudge into squares for serving.

How to Make Guinness Chocolate Fudge

Time needed: 4 hours and 10 minutes.

  1. Prep Time

Start by lining an 8×8-inch baking pan with tin foil. You want the aluminum foil to cover the bottom and sides of the pan so that the fudge doesn’t stick to the dish.

  2. Chocolate Mixture

Add the semisweet chocolate chips, dark chocolate chips, and sweetened condensed milk to a large heat-safe bowl. Place the microwave-safe bowl in the microwave and heat at 50% power in 30-second increments. Stir in between heating increments until the mixture is smooth.Guinness Chocolate Fudge ingredients in bowl

  3. Baileys

Stir the Guinness into the melted chocolate mixture. Mix until it’s creamy and smooth.Guinness Chocolate Fudge ingredients in bowl

  4. Pour

Pour the melted chocolate into the prepared baking pan. Use an offset spatula to spread the fudge mixture out until it has a fairly even and smooth surface before cooling and cutting.Guinness Chocolate Fudge on counter

  5. Set

Put the Guinness Fudge in the refrigerator for 4 hours or until it reaches its desirable texture. Sprinkle the fudge with cocoa powder if desired. Then slice the fudge into 2-inch squares and enjoy.Guinness Chocolate Fudge on counter

Can I make Guinness Fudge ahead?

Absolutely! Fudge recipes are great to make in advance. The sugar and cream mixture keeps well, so you don’t have to worry about it losing its flavor or texture. After making Guinness Chocolate Fudge, you can keep it sealed and stored in the fridge for up to 2 weeks. This is a great option if you’re making the recipe for a party or special occasion and want to get it prepped ahead of time.

What to Pair With Guinness Chocolate Fudge

This fudge would make a wonderful dessert following Guinness Corned Beef or Guinness Braised Short Ribs. Enjoy a luscious piece of fudge with a cup of Hot Chocolate if it’s cold outside. If you prefer a cold drink, try this Homemade Chocolate Milk with the Guinness Fudge. If you like coffee with your desserts, you’ll love pairing fudge with this recipe for Cold Brew Coffee. There’s also the classic pairing of chocolate and milk by serving up a cold, tall glass of milk fresh from the refrigerator.

How to Store

Serve: Make sure to give the fudge time to set in the fridge before serving. Once the fudge squares are set, they can stay good in a sealed container at room temperature for up to 3 days. You want to keep the fudge in your pantry or another dry, cool place. If your home is too warm, the Guinness Fudge can melt at room temperature. In that case, it’s better to store the chocolate treat in the fridge.

Store: To keep it in the fridge, cover the pan or seal the fudge in an airtight container. It can stay good in the fridge for up to 2 weeks. If you layer the fudge squares in an airtight container, make sure to put parchment paper between each layer, so they don’t stick together.

Freeze: To freeze the fudge, wrap each piece in plastic wrap, then seal them all in a freezer bag. They’ll be good for up to 6 months. Let the fudge thaw at room temperature to serve.

Ideas to Serve Guinness Chocolate Fudge

Fudge makes a great dessert and it looks so inviting to any guests who join you for a meal. Set out some fudge on a dessert table and they will certainly stand out. The boozy treat is sure to be a favorite with adults. However, keep in mind that these candies will be alcoholic. You add the beer after melting the chocolate, so none of the alcohol cooks out. If you’re serving a family event, you can put out other St. Patrick’s desserts like Mint Chocolate Chip Cookies and Mint Oreo Fudge for kids to enjoy.

Alternative Cooking Techniques

Stovetop Guinness Chocolate Fudge

Instead of making this simple fudge recipe in the microwave, you can prepare it on the stovetop. Follow the recipe below for the stove instructions:

  1. Start by lining a square pan with aluminum foil or parchment paper as usual.
  2. Add chocolate chips, sweetened condensed milk, and half of the Guinness beer to the saucepan over medium-low heat. Stir while the chocolate melts until the chocolate mixture is smooth and creamy. Remove the pan from heat and whisk in the remaining beer.
  3. Pour the mixture into the 8×8-inch square pan. Use an offset spatula to spread it evenly. Sprinkle the top with coarse sanding sugar if desired. Put the dish in the fridge for 4 hours to set completely before cutting the fudge into 2-inch squares.

Frequent Questions

Why does this Guinness Chocolate recipe work?

When you’re thinking of ingredients to pair with fudge, Guinness Beer may not be the first thing to come to mind. But beer and chocolate are such a perfect combination. The malty, caramelized flavor from Guinness beer only enhances the delicious chocolate.

Where does Guinness come from?

Guinness is a famous Irish beer originating in Dublin and now enjoyed worldwide. The Guinness brewery is still one of the most popular tourist attractions in Ireland.

How is fudge made?

You can easily double this recipe. Just double all of the ingredients, however make sure you also use a larger baking dish to cool your fudge, otherwise the batch will be way to thick to cut into small squares. 9×13-inch should work, but you could also use two 8×8-inch pans instead of one larger pan.

Variations

  • Espresso Powder: The stout beer already brings a slight coffee flavor to the fudge recipe; however, if you want to enhance that, you can add some espresso powder to the chocolate mixture. Mix in 1-2 tablespoons of espresso powder, depending on how strong of a flavor you want.
  • Vanilla Extract: You can also add some warm and comforting flavor to the fudge with vanilla extract. You don’t want the vanilla flavor to overwhelm the chocolate, so 1 tsp vanilla extract is plenty.
  • Salted Chocolate: For a contrasting salty flavor to go with the chocolate, sprinkle large-grain sea salt over the top of the fudge before putting it in the fridge. On the other hand, large grain sanding sugar would also look beautiful and add more sweetness.
  • White Chocolate Fudge: To make an extra sweet white chocolate version, just replace the semisweet chocolate chips with white chips.
  • Dark Chocolate Fudge: Another option is to make the fudge a little more bitter. To do this, replace the semisweet chocolate chips with dark chocolate chips. This will give your fudge a rich, bittersweet chocolate flavor.
  • Nuts: To add some crunch to the Guinness Fudge, you can mix chopped walnuts into the creamy chocolate mixture. Then sprinkle extra walnuts on top before letting the recipe set.
