Ingredients
 

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 4 teaspoons white sugar
  • 1 1/4 cups milk
  • 1 large egg
  • 4 tablespoons butter , melted

Instructions

  • Sift the flour, baking powder, and salt in a large bowl. Stir in the sugar.
  • Whisk the eggs, milk and melted butter in another bowl, then whisk into the flour mixture until smooth.
  • Heat a pan or griddle on medium-low heat and coat with a small layer of butter.
  • Using a tablespoon measure use about ¾ of a tablespoon of batter (just scoop with the tablespoon measure but don’t scrape out the entire amount, a quick pour will leave enough behind).
  • Cook the pancakes on both sides until lightly browned, about 45 seconds on each side.
  • Enjoy with your favorite toppings or mix-ins.

  2. I made these as freeze-aheads for my 2-year old’s lunch boxes, so I halved the recipe, and they turned out beautifully!! They fluff up so well (cheers, baking powder ratio) and he gobbled them up, bento and all. Note: if you wanna make them cute or animal like, while you’ve poured one onto the griddle, add a half-tablespoon at the top to make panda ears.

    1. Obviously that’s going to depend on the amount of batter you’re using for each pancake, but it should make about 48 mini pancakes.

  4. These pancakes have way too much baking soda!! It’s all you can taste in them. Will not make them again, sorry. They looked nice though.

  6. Just a post note: My recipe was a little different from your but I called them Dee’s Dollar Pancakes with Blueberry Sauce..I Made fresh Blueberry Syrup to go with them. Dianne

      1. Yes though you’ll need to lessen the amount of baking powder as well. I’ve not tested so I’m not sure of an exact amount but thinking you may only need 1 1/4 teaspoons of baking powder. If you decide to play around with it, I’d love to know what works. Thanks!
