Ingredients

  • 1/2 cup sugar
  • 1/2 cup  vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 ripe bananas , mashed
  • 1/2 cup walnuts , chopped
  • 2 cups flour
  • 1 teaspoon  baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon

Instructions

  1. Preheat oven to 350 degrees and line muffin tin with cupcake liners.

  2. In a large bowl whisk together the sugar, oil, egg and vanilla extract until well combined.

  3. Add bananas and half of the walnuts.
  4. Add flour, baking soda, salt and cinnamon.
  5. Add to muffin pan and sprinkle the rest of the walnuts on top
  6. Bake for 20-25 minutes, until toothpick poked in center muffin comes out clean.
