Heaven in a bite!A cookie dough invasion has taken place in our house recently. It all started with this Eggless Chocolate Chip Cookie Dough that was baked into these Salted Dark Chocolate Cookie Dough Stuffed Cupcakes. Since then I have been making all different kinds of cookie dough treats I can’t wait to share with you. I was browsing the internet trying to come up with new and unique ways to use up all the cookie dough we have in the house and I came across these cupcakes on an amazing blog called Something Swanky. I couldn’t look away!

These cupcakes are an amazing combination of the flavors of my Trail Mix Granola Bars and the cookie dough I mentioned above. The cherry on top is that the frosting also has cream cheese mixed in, making these cupcakes an amazing, indulgent experience! They’re easy to make, even easier to frost if you use an ice cream scoop like I did and they will ensure you are the most popular person around.

Preheat oven to 350º. Using a stand mixer, whisk together butter and sugar until light, about 3 minutes. Add in peanut butter, mix to combine. Mix in flour and baking powder until just combined. Add in chocolate chips and peanuts and mix for just a couple of seconds until mixed in. Chocolate Chip Peanut Butter Cupcakes topped with Monster Cream Cheese Cookie Dough Frosting! Using a ¼ cup ice cream scoop or other measure, scoop batter into cupcake liners. Chocolate Chip Peanut Butter Cupcakes topped with Monster Cream Cheese Cookie Dough Frosting! Full of M&Ms, peanut butter, brown sugar, oats and chocolate chips. Heaven in a bite!
Bake for 20 minutes or until toothpick inserted comes out clean. Let cool on a wire rack.

For the frosting, use a stand mixer to cream the butter, cream cheese and peanut butter together. Chocolate Chip Peanut Butter Cupcakes topped with Monster Cream Cheese Cookie Dough Frosting! Full of M&Ms, peanut butter, brown sugar, oats and chocolate chips. Heaven in a bite!Add in the brown sugar, vanilla, oats and flour. Add in the powdered sugar, until well mixed.Chocolate Chip Peanut Butter Cupcakes topped with Monster Cream Cheese Cookie Dough Frosting! Full of M&Ms, peanut butter, brown sugar, oats and chocolate chips. Heaven in a bite!
Finally add the M&Ms and Chocolate chips, until just combined. Using your ¼ cup ice cream scoop, scoop out the cookie dough onto the cooled cupcakes. Chocolate Chip Peanut Butter Cupcakes topped with Monster Cream Cheese Cookie Dough Frosting! Monster Cookie Dough Cupcakes

Ingredients
 

Cupcakes:

  • 1/4 cup butter , softened
  • 1/2 cup creamy peanut butter
  • 1 cup sugar
  • 2 whole eggs
  • 1 Tablespoon vanilla extract
  • 1 1/2 cups flour
  • 1 1/4 teaspoon baking powder
  • 1/3 cup milk
  • 1/4 cup milk chocolate chips
  • 1/4 cup chopped peanuts

Cookie Dough Frosting:

  • 8 oz cream cheese , softened
  • 1/2 cup butter , softened
  • 1/2 cup creamy peanut butter
  • 1 1/2 cups powdered sugar
  • 3 Tablespoons brown sugar
  • 3 Tablespoons all purpose flour
  • 2 teaspoons vanilla
  • 1 cup oats
  • 1 bag plain mini M&Ms
  • 1 cup mini or regular semi-sweet chocolate chips

Instructions

  • Preheat oven to 350º.
  • Using a stand mixer, whisk together butter and sugar until light, about 3 minutes.
  • Add in peanut butter, mix to combine.
  • Add eggs, vanilla and milk until well mixed.
  • Mix in flour and baking powder until just combined.
  • Add in chocolate chips and peanuts and mix for just a couple of seconds until mixed in.
