A cookie dough invasion has taken place in our house recently. It all started with this Eggless Chocolate Chip Cookie Dough that was baked into these Salted Dark Chocolate Cookie Dough Stuffed Cupcakes. Since then I have been making all different kinds of cookie dough treats I can’t wait to share with you. I was browsing the internet trying to come up with new and unique ways to use up all the cookie dough we have in the house and I came across these cupcakes on an amazing blog called Something Swanky. I couldn’t look away!
These cupcakes are an amazing combination of the flavors of my Trail Mix Granola Bars and the cookie dough I mentioned above. The cherry on top is that the frosting also has cream cheese mixed in, making these cupcakes an amazing, indulgent experience! They’re easy to make, even easier to frost if you use an ice cream scoop like I did and they will ensure you are the most popular person around.
Preheat oven to 350º. Using a stand mixer, whisk together butter and sugar until light, about 3 minutes. Add in peanut butter, mix to combine. Add eggs, vanilla and milk until well mixed.
Mix in flour and baking powder until just combined. Add in chocolate chips and peanuts and mix for just a couple of seconds until mixed in.
Using a ¼ cup ice cream scoop or other measure, scoop batter into cupcake liners.
Bake for 20 minutes or until toothpick inserted comes out clean. Let cool on a wire rack.
For the frosting, use a stand mixer to cream the butter, cream cheese and peanut butter together. Add in the brown sugar, vanilla, oats and flour. Add in the powdered sugar, until well mixed.
Finally add the M&Ms and Chocolate chips, until just combined. Using your ¼ cup ice cream scoop, scoop out the cookie dough onto the cooled cupcakes.
