This simple recipe for classic chicken broth is the perfect base ingredient to make Homemade Chicken Noodle Soup and a variety of other classic recipes.

Chicken Broth has a simple, savory, comforting flavor that makes it a great base flavoring ingredient for many recipes. It’s the perfect base for soups like Chicken and Rice Soup, Vegetable Soup, and plenty of other hearty soup recipes. It also is excellent for making sauces and marinades or using as a braising liquid. You can also use broth as a substitute for water when cooking a batch of rice and pasta to add extra flavor. It’s a relatively hands-off recipe that you’ll be glad you took the time to make.

Ingredients
 

  • 8 chicken legs
  • 10 cups water
  • 1 yellow onion , cut into wedges
  • 1 teaspoon kosher salt
  • 1 teaspoon peppercorns , optional
  • 1 bay leaf , optional

Instructions

  • Add the chicken legs, water, seasonings, and onion to a large pot.
  • Bring to a simmer on medium heat, cover and cook for 60 minutes.
  • Remove the chicken, reserve the meat for another recipe.
  • Strain the chicken stock through a fine strainer or chinois.
  • Let cool, then store in refrigerator or freezer.

Notes

Slow cooker version for richer broth: Add all ingredients mentioned above. Place the lid on the slow cooker and set it to low. Leave the chicken broth to cook for at least 8 hours. You can cook longer, even up to 24 hours, for an extra flavorful broth. Strain as directed in recipe.
