Sabrina’s Cilantro Lime Shrimp Recipe

There are so many reasons to make this flavorful and juicy shrimp recipe the star of your mealtime all summer long. It’s delicious hot or cold, so leftovers are just as yummy as the first time around. Buttery, garlicky shrimp is cooked until pink and tender in a cast-iron skillet and then finished off with more butter, freshly squeezed lime juice, and fresh cilantro leaves. The cilantro and lime brightens the entire meal while giving a refreshing citrus flavor. You can have a light dinner on the table in less than 20 minutes, serving the shrimp with a green side salad, Black Beans, flour or corn tortillas, and a glass of white wine.

Cilantro Lime Shrimp

Ingredients
 

  • 2 pounds shrimp , peeled and deveined (13-15 count)
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 1/3 cup unsalted butter , divided
  • 3 cloves garlic , minced
  • 1 lime , zested and juiced
  • 1/4 cup fresh cilantro , finely minced

Instructions

  • Season shrimp with salt and pepper.
  • Add half the butter to a large heavy skillet on high heat.
  • Add the shrimp to the pan and cook for 1-2 minutes on each side until pink.
  • Add in the lime zest, lime juice and cilantro.
  • Add in the remaining butter, cook for 1 minute, tossing to coat then remove from heat and serve.
