Chicken and Rice is a classic comfort food dish that cooks chicken with rice in a creamy sauce, for a flavorful one-pot meal. This traditional dish goes to a new level by using a slow cooker to cook the ingredients slowly over several hours. Thus allowing the flavors to meld together in a hearty and satisfying meal, that’s perfect for busy weeknight dinners or cozy weekend gatherings.

Ingredients
 

  • 2 cups brown rice , uncooked
  • 4 cups chicken broth
  • 2 cans cream of chicken soup , (10.5 ounce cans)
  • 4 cloves garlic , minced
  • 1 yellow onion , diced
  • 2 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 5 chicken thighs , bone-in skin on
  • 1 cup frozen peas
  • 1/4 cup parsley , minced

Instructions

  • Add rice to a large 6 quart slow cooker.
  • Add in broth and condensed chicken soup, stirring well to combine.
  • Add in garlic, onion, salt and black pepper, stirring again.
  • Top with chicken thighs, making sure the skin stays above the liquid if possible.
  • Season the chicken thighs with more salt and black pepper if desired.
  • Cover and cook on low for 6-7 hours or until the rice is cooked through and the chicken is cooked.
  • Add in the frozen peas, stir.
  • Serve with parsley.
