Sabrina’s Strawberry Mousse Recipe

This light and fluffy Strawberry Mousse may sound fancy but it is actually very easy to make! It really comes down to three key components: pureed strawberry mixture, whipped cream, and gelatin. They are prepared separately then folded together into the dreamiest, creamiest and fluffiest mousse filled with fresh strawberry flavor. Garnish it with Whipped Cream, fresh strawberry halves, and a mint sprig for a dessert that looks like it came from a gourmet bistro!

Strawberry Mousse

Ingredients
 

  • 4 cups strawberries , hulled
  • 1 teaspoon lemon juice
  • 1 cup sugar
  • 1 tablespoon hot water , 110 degrees or warm to touch
  • 1 teaspoon powdered gelatin
  • 1 1/2 cups heavy whipping cream , ice cold

Instructions

  • Add the strawberries, lemon juice and the sugar to a food processor and puree until smooth.
  • Pour the strawberry puree through a cheesecloth or sieve to remove any seeds.
  • To your stand mixer add the heavy cream on medium speed, then increase to high speed until it reaches soft peak stage.
  • To a small cup add the hot water and powdered gelatin.
  • Stir well and let sit until gelatin is absorbed, then let cool for 2 minutes.
  • Add the gelatin mixture to the heavy cream and beat to stiff peaks.
  • Fold in the strawberry puree gently.
  • Pour into serving glasses, top with whipped cream, mint and extra strawberry slices as a garnish.
