One of my favorite things about these Apple Pancakes is the homemade apple cider syrup recipe. The homemade syrup enhances the flavor of the apple chunks, and makes them stand out beautifully. These fluffy golden pancakes are the best way to start a cozy at-home weekend.

Ingredients
 

Apple Pancakes

  • 1 1/4 cups flour
  • 1 teaspoon baking soda
  • 2 tablespoons sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 4 tablespoons unsalted butter , melted
  • 1 cup low-fat buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 fuji apple , peeled, cored and diced

Cider Syrup:

  • 1 cup apple cider
  • 1/3 cup sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg

Instructions

  • Sift the flour, baking soda, sugar, cinnamon, and salt twice into a large bowl.
  • In a medium bowl whisk together butter, buttermilk, eggs and vanilla extract until smooth.
  • Add in flour mixture and apples and whisk until just combined.
  • Let sit for 5 minutes.
  • Scoop ¼ cup batter onto lightly buttered griddle.
  • Cook on medium heat and cook until bubbles form.
  • Flip and cook for 20 seconds.

Apple Syrup:

  • In a large saucepan add the apple cider, sugar, cornstarch cinnamon, and nutmeg whisking well.
  • Turn the heat on to medium and cook for 3-4 minutes or until syrup starts to thicken.
  • Let cool for a few minutes before serving over pancakes
