Ingredients
- 2 medium eggplant
- 1/4 cup olive oil
- 2 cloves garlic , minced
- 1 teaspoon kosher salt
- 1/2 teaspoon coarse ground black pepper
- 1/4 teaspoon dried oregano
- ¼ teaspoon dried basil
- 1/4 teaspoon dried thyme
Instructions
- Preheat oven to 350 degrees.
- Cut the eggplant in half and score into an x shape throughout the cut part about 1/2" deep in the flesh.
- Brush the eggplant with olive oil.
- Top with garlic, kosher salt, black pepper, basil, oregano, and thyme evenly.
- Cook for 25-30 minutes until the flesh is golden brown and the eggplant is tender.
- Garnish with a drizzle of extra olive oil if desired when serving.
