They’re the perfect breakfast if you want something comforting, sweet, and filling for the whole family to enjoy. Ingredients
- 2 cups buckwheat flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 tablespoon sugar
- 2 tablespoons unsalted butter , melted
- 2 1/2 cups low-fat buttermilk
- 2 large eggs , beaten
- 1 teaspoon vanilla extract
Instructions
- Sift the flour, baking powder, baking soda, cinnamon, salt, and sugar twice into a large bowl.
- In a medium bowl whisk together butter, buttermilk, eggs, and vanilla extract until smooth.
- Add in flour mixture and whisk until just combined.
- Let sit for 5 minutes.
- Scoop ¼ cup batter onto lightly buttered griddle on medium heat and cook until bubbles form.
- Flip and cook for 30 seconds.
