Apart from being gluten-free, using buckwheat flour also gives this recipe a more nutty and earthy flavor than regular pancakes. They’re the perfect breakfast if you want something comforting, sweet, and filling for the whole family to enjoy. You can serve gluten-free Buckwheat Pancakes with butter and maple syrup for a classic and delicious breakfast. They also taste amazing with a dollop of Whipped Cream and fresh berries, or sliced bananas over the top.

Ingredients
 

  • 2 cups buckwheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 2 tablespoons unsalted butter , melted
  • 2 1/2 cups low-fat buttermilk
  • 2 large eggs , beaten
  • 1 teaspoon vanilla extract

Instructions

  • Sift the flour, baking powder, baking soda, cinnamon, salt, and sugar twice into a large bowl.
  • In a medium bowl whisk together butter, buttermilk, eggs, and vanilla extract until smooth.
  • Add in flour mixture and whisk until just combined.
  • Let sit for 5 minutes.
  • Scoop ¼ cup batter onto lightly buttered griddle on medium heat and cook until bubbles form.
  • Flip and cook for 30 seconds.
