When I first heard of Carrot Salad, I’ll admit I was a little skeptical. It’s a traditional Southern potluck dish which are usually winners, so I decided to give it a try and I’m glad I did! The sweet raisins pair perfectly with the earthy carrots and the shredded raw veggies have the perfect crisp texture. From cookouts to potlucks to picnics, this salad is a refreshing, flavorful and beautiful way to brighten up your summer meals.

Carrot Salad (w/Raisins)

Ingredients
 

  • 1/3 cup mayonnaise
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice
  • 1/4 teaspoon kosher salt
  • 1 pound carrots , peeled and shredded (about 4 cups)
  • 1/2 cup raisins
  • 1/2 cup golden raisins

Instructions

  • Add mayonnaise, sugar, lemon juice and salt to a large bowl and whisk together until creamy.
  • Add in the carrots and both kinds of raisins.
  • Stir well to combine.
  • Refrigerate 1 hour before serving.
