Some of the best beef burgers from world renowned chefs (think Gordon Ramsey), are made with just a couple pantry spices and meat. This recipe proves that you can also make a juicy burger out of ground chicken without a bunch of extra ingredients. These easy grilled chicken patties are moist and flavorful, and go great with all your favorite burger toppings. The key to moist and juicy burgers is less about the seasonings, and more about the technique, preparation, and type of meat.

Ingredients
 

Chicken Burger Patty:

  • 1 1/2 pounds ground chicken , not chicken breast
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 2 tablespoons vegetable oil

To Finish:

  • 1/2 red onion , thinly sliced
  • 4 slices cheddar cheese
  • 1/3 cup mayonnaise
  • 4 large hamburger buns
  • 4 leaves lettuce
  • 4 slices tomato
  • 8 pickle chips

Instructions

  • Preheat your grill or grill pan to medium-high.
  • In a large bowl add the ground chicken, salt, pepper, paprika and onion powder and form into 4 equal portions.
  • Shape into patties larger than the buns (by 1 inch).
  • Press down on the middle of the patty with your thumb to make an indentation.
  • Brush the grill grates with vegetable oil.
  • Add patties to the grill and cook for 3-5 minutes on each side.
  • Top with cheddar cheese.
  • Spread buns with mayonnaise and add bottoms to grill mayonnaise side down.
  • Cook for 1 minute until browned.
  • Remove bun bottoms and add bun tops, mayonnaise side down while you assemble burgers.
  • Add pickles, chicken patty, onions, lettuce, tomato and finally the bun tops.
