Juicy Chicken Meatballs are an amazing way to lighten up spaghetti dinner while still enjoying a family favorite. The meatball bites are easy to make in just 20 minutes and packed with flavor. Serve them with whole-grain pasta, homemade Marinara Sauce, and a sprinkle of Parmesan cheese for a delicious comforting yet nutritious weeknight dinner.

Ingredients
 

  • 1 pound lean ground chicken
  • 3 cloves garlic , minced
  • 1/4 yellow onion , minced
  • 1/4 cup parsley , chopped
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 1/2 teaspoon oregano
  • 1/2 teaspoon dried basil
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 2 tablespoons vegetable oil

Instructions

  • In a large bowl mix ground chicken, garlic, onion, parsley, salt, black pepper, oregano, basil, egg and breadcrumbs until just combined.
  • Shape mixture into 1-inch balls.
  • Add vegetable oil into large heavy skillet on medium-high heat.
  • Cook the chicken meatballs in small batches for 5-6 minutes or until cooked through.
  • Serve with marinara sauce and pasta.
