These easy Homemade Gingerbread Muffins are packed with sticky sweet molasses and ginger for a muffin that tastes like classic gingerbread. These are a great breakfast to make during the holidays. You can enjoy the tasty, spiced muffins warm with a little butter, and a hot cup of coffee. Or, turn them into easy Christmas cupcakes with Cream Cheese Frosting. Finish off with a drizzle of Salted Caramel Sauce for an extra special treat.

Ingredients
 

  • 2 large eggs
  • 1/2 cup molasses
  • 1/2 cup brown sugar , packed
  • 1/2 cup unsalted butter , melted
  • 1/2 cup hot water
  • 2 cups flour
  • 1 1/2 teaspoons baking soda
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cloves

Instructions

  • Preheat oven to 350 degrees and line a 12 cup muffin tin with muffin liners.
  • Whisk together eggs, molasses, and brown sugar until smooth in a large bowl.
  • Add in melted butter and hot water and whisk until smooth.
  • Sift together flour, baking soda, ginger, cloves, and salt then add to the bowl.
  • Whisk until just combined.
  • Scoop into muffin liners and bake for 22-25 minutes.
