Ingredients
 

  • 1/2 cup coconut oil , melted
  • 1/2 cup honey
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1 cup pecans , chopped

Instructions

  • Preheat oven to 325 degrees and line a baking sheet with parchment paper.
  • In a large bowl add the coconut oil, honey, cinnamon, nutmeg, salt and vanilla extract.
  • Whisk well until smooth.
  • Add in rolled oats and pecans, then toss well to coat.
  • Add the mixture in an even layer to your baking sheet.
  • Bake for 15 minutes.
  • Stir the mixture carefully on the baking sheet.
  • Bake for an additional 15 minutes until mostly dry.
  • Remove the baking sheet, let cool for 10 minutes then break apart the granola in chunks.
  • Best as a snack, in a yogurt parfait with berries and honey or even over ice cream.

Notes

After letting the granola cool, seal it up in a bag or airtight container, and it’ll keep fresh in your pantry for up to 2 months.
