This Southern cheese spread makes the best Grilled Cheese Sandwiches ever! It’s more than a Sandwich filling though, try it slathered on Burgers or mixed in Pimento Pasta Salad too.

When it comes to iconic Southern recipes, Pimento Cheese is undoubtedly at the top of the list. Known as the pate or caviar of the South, this creamy and flavorful spread is a staple in Southern cuisine, and has been a favorite appetizer for generations. Delicious tangy Pimento Cheese can be spread on crackers or used as a dip with chips and crunchy veggies. It makes a quick, easy lunch served as a cold sandwich but my favorite way to eat it is in a melty Grilled Cheese!

Ingredients
 

  • 2 cups extra-sharp Cheddar cheese , shredded
  • 8 ounces cream cheese , softened
  • 1/2 cup mayonnaise
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 4 ounce chopped pimento peppers , drained
  • 1/2 teaspoon kosher salt

Instructions

  • Place the Cheddar cheese, cream cheese, mayonnaise, garlic powder, cayenne pepper, onion powder, pimento and salt into the large bowl of a mixer.
  • Beat at medium speed, with paddle if possible, until thoroughly combined.
  • Refrigerate for 2 hours before using if you can to allow the flavors to come together more.
  • Serve over crackers, crostini or as a filling in a grilled cheese sandwich.
