This hearty, delicious Pork Stew is a full meal on its own. All you need is some warm crusty bread, and a glass of red wine. The aromatic veggies, and smoky flavor round out this dish effortlessly. And by using pork loin in this recipe, the meat will be tender in less time. Meaning you’ll have dinner on the table quicker than the typical slow cooked beef stews.

Ingredients
 

  • 4 slices bacon , chopped
  • 2 pounds pork loin , cut into 1" chunks
  • 1 yellow onion , chopped
  • 2 stalks celery , sliced thinly
  • 2 cloves garlic , minced
  • 2 carrots , peeled and sliced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 1 teaspoon thyme
  • 4 tablespoons butter
  • 1/4 cup flour
  • 6 cups beef broth
  • 1/4 cup tomato paste
  • 1 cup red wine
  • 2 Yukon potatoes , cut into 2-inch chunks

Instructions

  • Preheat the oven to 325 degrees.
  • In a large dutch oven, cook the bacon on medium heat until crispy then remove, leaving the fat behind.
  • Add in the pork, cooking until browned, 3-4 minutes on all sides.
  • Remove the pork from the pot and add in the onions, celery, garlic, carrots, salt, pepper, and thyme. Cook for 2-3 minutes.
  • Add the butter to the pot, then when melted add the flour and whisk well until the flour is absorbed.
  • Whisk in the beef broth (making sure all the brown bits from the bottom of the pot are removed), tomato paste, red wine, potatoes, pork, and bacon. Bring to a simmer.
  • Move (uncovered) to the oven and cook for an additional 45-50 minutes.
