Yogurt marinated chicken is a flavorful dish made by marinating chicken breasts in a mixture of yogurt, olive oil, lemon juice, and a variety of spices. Ingredients
- 4 chicken breasts , boneless and skinless
- 1 cup Greek yogurt , whole milk
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 4 cloves garlic , minced
- 1 teaspoon kosher salt
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon coarse ground black pepper
- 1/4 teaspoon coriander
- 1/2 teaspoon cinnamon
- 1/4 cup parsley , chopped
Instructions
- Pound the chicken into and even thickness with a kitchen mallet.
- Score the chicken into X's 1/2" deep with a paring knife.
- In a large bowl whisk together yogurt, olive oil, lemon juice, lemon zest, garlic, salt, cumin, paprika, black pepper, coriander, cinnamon and parsley.
- Add in the chicken, turn to coat.
- Let marinate, refrigerated for 2-4 hours.
- Heat grill on medium high heat.
- Grill for 6-7 minutes on each side until cooked through to 165 degrees.
- Serve with a green salad and pilaf.
