Since this recipe is simple and fast, take the extra couple of minutes to brown your chicken in batches. By creating a browned exterior to the chicken, the wonderfully velvety sauce won’t spoil the crispy outer edges. This tasty alternative to take-out will be your new favorite.

Ingredients
 

  • 3 tablespoons vegetable oil
  • 1 pound boneless skinless chicken breasts , cut into thin slices
  • 16 ounces pineapple chunks , canned
  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon cornstarch

Instructions

  • Add vegetable oil to a large skillet on high heat.
  • Cook the chicken in batches until browned on each side, about 6-8 minutes.
  • Remove chicken from pan.
  • Add pineapple chunks, reserve the juice.
  • Cook the pineapple chunks for 2-3 minutes on each side until lightly browned.
  • While pineapple is cooking, whisk together pineapple juice, soy sauce, honey and cornstarch.
  • Add the sauce mixture to your pan and cook until sauce has thickened.
  • Mix chicken into the pan with the sauce and cook for 30 seconds to heat the chicken through.
  • Serve immediately.
