Sabrina’s Instant Pot Mashed Sweet Potato Recipe
If you’re looking for a new easy way to cook sweet potatoes, try out this recipe. The instant pot makes it pretty much fool-proof. It’s a great way to get that taste you want quickly. Whether it’s Sweet Potato Casserole, Candied Sweet Potatoes, or these Instant Pot Sweet Potatoes, their rich flavor and buttery texture are hard to beat. The unique sweet taste also makes a great contrast to go with any of your typical savory main dishes.


Ingredients
- 3 cups water
- 4 pounds sweet potatoes , peeled and in large cubes
- 1/2 cup heavy cream
- 1/2 cup brown sugar , packed
- 1/2 cup unsalted butter , at room temperature
- 1 teaspoon cinnamon
- 1/2 teaspoons kosher salt
Instructions
- To a 6 quart instant pot (pressure cooker) add the metal rack insert.
- Pour in the water, then add potatoes.
- Cook on high pressure for 15 minutes, then release pressure naturally for 20 minutes.
- Carefully remove potatoes to a large mixing bowl (or if you have a silicone mashed just remove your metal rack insert).
- Mash the potatoes until they're mostly broken down, about 1 minute.
- To the sweet potatoes, add the heavy cream, brown sugar, butter, cinnamon, and salt.
- Continue to mash until the potatoes are as smooth or chunky as you’d like.
