Ingredients
 

  • 3 cups water
  • 4 pounds sweet potatoes , peeled and in large cubes
  • 1/2 cup heavy cream
  • 1/2 cup brown sugar , packed
  • 1/2 cup unsalted butter , at room temperature
  • 1 teaspoon cinnamon
  • 1/2 teaspoons kosher salt

Instructions

  • To a 6 quart instant pot (pressure cooker) add the metal rack insert.
  • Pour in the water, then add potatoes.
  • Cook on high pressure for 15 minutes, then release pressure naturally for 20 minutes.
  • Carefully remove potatoes to a large mixing bowl (or if you have a silicone mashed just remove your metal rack insert).
  • Mash the potatoes until they're mostly broken down, about 1 minute.
  • To the sweet potatoes, add the heavy cream, brown sugar, butter, cinnamon, and salt.
  • Continue to mash until the potatoes are as smooth or chunky as you’d like.
