Sabrina’s Roasted Cherry Tomatoes Recipe
Roasting tomatoes is one of the best ways to enhance their deliciousness. The roasting process draws out some of the extra moisture, which intensifies the taste. As they roast, the tomatoes burst open and are able to absorb the extra flavor from the oil and seasonings. No matter how you serve them, oven-roasted tomatoes are the perfect pops of color and flavor to brighten up your meal.


Ingredients
- 2 packages cherry tomatoes on vines
- 1/4 cup extra-virgin olive oil
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon sugar
- 1/2 teaspoon kosher salt
- 1/4 teaspoon coarse ground black pepper
- 2 cloves garlic , minced
Instructions
- Preheat the oven to 400 degrees.
- Add the cherry tomatoes to a 9×13 baking pan.
- In a bowl whisk together the olive oil, crushed red pepper flakes, sugar, salt, black pepper and garlic.
- Brush the mixture over the tomatoes, then pour the remaining oil over the tomatoes.
- Bake for 15-18 minutes until the tomatoes just begin to burst.
- Serve with grilled meats or chicken.
