When you think of eggplant, most think of a vegetable with a bitter flavor and mushy texture. Making this Roasted Eggplant recipe is sure to change your mind about the seasonal vegetable forever. With minimal effort, this basic recipe achieves wonderful results. During the roasting time, the eggplant becomes more tender, reducing the sour flavor. It’s left with a mild, slightly sweet, and smoky taste that you’re sure to love.

Ingredients
 

  • 2 medium eggplant
  • 1/4 cup olive oil
  • 2 cloves garlic , minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper

Instructions

  • Preheat oven to 400 degrees.
  • Peel strips into the eggplant 1″ apart.
  • Cut the eggplant into 1″ chunks.
  • Add the eggplant, olive oil, garlic, salt and black pepper to the bowl, mixing well.
  • Place the eggplant on a large sheet pan in a single layer. If your sheet pan is too small, use two.
  • Cook for 20 minutes.
  • Stir and cook for up to an additional 10 minutes until eggplant are roasted and soft.
  • Garnish with a drizzle of extra olive oil if desired when serving.
