Sabrina’s Savory Herb Muffin Recipe

These delicious little muffins are perfect for your next potluck or chili cook-off. Unlike typical breakfast muffins, these Herb Muffins are savory and will go better with a classic dinner than with your morning coffee. Although they’re so good I won’t blame you if you want to enjoy them for breakfast too, especially if you swap them in for biscuit with your gravy. The rich blend of herbs and buttery breading makes them the perfect complement to any hot meal!

Ingredients
 

  • 1 large egg
  • 1 cup whole milk
  • 1/3 cup vegetable oil
  • 2 tablespoons sugar
  • 2 cups flour
  • 1 cup whole wheat flour
  • 1 tablespoon baking powder
  • 2 teaspoons dried thyme
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder , (optional)
  • 1/2 teaspoon salt

Instructions

  • Preheat oven to 350 degrees and line a 12 cup muffin tin with muffin liners or spray with baking spray.
  • In a large bowl whisk together the egg, milk, oil, and sugar.
  • Sift together the flour, whole wheat flour, baking powder, thyme, oregano, garlic powder, and salt.
  • Add to the wet ingredients and whisk until just combined.
  • Scoop into muffin cups and bake for 18-20 minutes until a toothpick comes out clean.
