About this Recipe

My take on the parfait is pretty straightforward. I love using vanilla yogurt because of its rich flavor. The fresh berries are not just there for color, they add a fruity punch. Some crunchy granola makes them heartier plus adds some nice texture. And the honey drizzle? It’s the little detail that ties everything together. Give it a try, and you might just find your new favorite snack!

While most coffee shops and convenience stores have pre-made parfaits, making your own lets you control the ingredients and flavors. You can use whatever type of yogurt you prefer, like regular yogurt or Greek yogurt, swap in your favorite fresh fruit, add nuts or even sweet ingredients like shredded coconut. This is really helpful if you have selective eaters or dietary restrictions!

What is a Parfait?

The name “parfait” (PAR-fay) originates from the French word meaning “perfect.” Traditionally, a parfait in France referred to a kind of frozen dessert, but in English-speaking countries, it has come to represent the layered yogurt, fruit, and granola dish.

Ingredients

  • Vanilla Yogurt: Its creamy texture pairs with the sweet hint of vanilla. You can use any yogurt style you like best like Greek yogurt, coconut milk yogurt, or regular yogurt.
  • Granola: Gives a crunchy contrast to the yogurt and fruit. I usually like a vanilla granola mix to go with the yogurt, but feel free to use your favorite!
  • Fresh Berries: I used a mix of strawberries and raspberries, but you can use whatever berries you like best. Blackberries and blueberries go great, but also fresh fruit like kiwi, peaches, or cherries work. Just cut them in small pieces so it’s easy to eat.
  • Honey: A little bit of honey adds the perfect amount of sweetness.

How to Make

Time needed: 5 minutes.

  1. Yogurt Base

Start by spooning ⅓ cup of vanilla yogurt into each of your four serving glasses.

  2. Granola and Berry Layer

Sprinkle in ⅛ cup of granola followed by an equal amount of sliced strawberries into each glass.

  3. Yogurt Layer

Top the existing layers with another ⅓ cup of vanilla yogurt for each glass.

  4. More Berries

Evenly distribute the raspberries or fresh blueberries among the glasses.

  5. Final Yogurt and Top Layer

Complete the yogurt layering by adding the remaining yogurt to each glass. Garnish with granola and strawberry slices.

  6. Drizzle and Serve

Finish off by drizzling a tablespoon of honey over each parfait.

Can I prepare Ahead of Time?

Layer the yogurt and fruit in a to-go container and seal it tightly in the refrigerator. Then when ready to eat, add the granola topping at the last second. If you add the topping too early, it will end up a little bit soggy and you won’t get that nice crunchy texture you’re looking for.

Tips & Tricks

  • Granola Crunch: Add granola just before eating to maintain its crunch, preventing it from becoming soggy due to the yogurt.
  • Berries Choice: Fresh berries have the best texture, but thawed frozen berries will work too, they will just be softer. You’ll also want drain them so your yogurt doesn’t get watery.
  • Crunchy Parfait: Add some chopped pecans, walnuts, or peanuts to give your parfait some extra crunchy texture.
  • Yogurt on the Go: Use a mason jar as a grab-and-go container that’s both easy to pack and will let you see the layers through the glass!

How to Store

  • Store: If you’ve prepared the parfait in a glass or jar, simply cover it tightly with plastic wrap or a lid. Refrigerate immediately and consume within a day for the best flavor and texture.
  • Freeze: Parfaits should not be frozen as their consistency will not be as ideal when thawed.

Frequent Questions

Can I substitute Greek yogurt for vanilla yogurt in the parfait?

Absolutely! Greek yogurt will give the parfait a tangier and thicker texture. If you prefer a sweeter profile, consider adding a bit more honey or a natural sweetener of your choice. You can also use plain yogurt.

I ran out of granola. What else can I use for the crunch?

No granola? No worries! You can use cereal from the box, crushed nuts, toasted oats, chia seeds, or even crushed cookies as an alternative layer for that desired crunch.

My parfait turned out too watery. What went wrong?

Using fruits that release a lot of juice, like pineapples or overripe berries, can make your parfait watery. Next time, pat your fruits dry or use fruits that retain moisture like bananas or mangoes.

Is there a vegan option?

Certainly! Swap out the dairy yogurt for a plant-based alternative like coconut or almond yogurt. Ensure your granola is vegan, and use maple syrup or agave nectar instead of honey.

Can I add other fruits?

Definitely. Parfaits are versatile, and you can mix and match fresh fruits based on seasonal availability or personal preference. From kiwi to mangoes to pomegranate seeds, the possibilities are endless! Just about any kind of frozen fruit is good too!
