Sabrina’s Air Fryer Zucchini Recipe

Using the air fryer is an ideal cooking method if you like the flavor and texture of fried food but don’t want all the added oil. Zucchinis are the perfect option for this recipe because they have a fairly mild, slightly sweet flavor, and buttery consistency when cooked. Coating the zucchini in parmesan creates a delicious blend of flavors, with a sharp, nutty flavor. The breadcrumb coating keeps the chips nice and crisp rather than letting them soften too much. They make an excellent addition to your party spread, to put out with other finger foods.

Air Fryer Zucchini

Ingredients
 

  • 3/4 cup bread crumbs
  • 3/4 cup Parmesan cheese , grated
  • 1 large egg
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 1 zucchini , thinly sliced into coins

Instructions

  • Pre-heat air fryer to 350 degrees and spray the air fryer basket with vegetable oil spray.
  • In one bowl mix together the bread crumbs and parmesan cheese.
  • In a second bowl add the egg, salt and pepper and beat well.
  • Add the zucchini to the bowl of egg.
  • Dredge each piece of the zucchini into the breadcrumb mixture on both sides then add in a single layer to your air fryer basket.
  • Cook for 8 minutes then turn and cook for 5 minutes.

Notes

Note: Work in batches if needed, the slices need to be in a single layer when cooking.
