Chef’s Note

The traditional texture you want for these waffles is crispy on the outside, and soft and airy on the inside. Furthermore, if you over mix the batter, they can turn out too chewy or gummy. Only mix until just combined because the gluten will overdevelop, resulting in chewy waffles.

Can this be made ahead of time?

You can prepare this delicious recipe in advance and store for up to 3 months. Make the cinnamon topping and batter as usual. Then cook and let cool completely. After they’ve cooled, put in a freezer bag or another airtight, freezer-safe container. Keep them in the freezer until you’re ready to reheat and serve, and make the cream cheese icing fresh.

How to Store

  • Serve: Serve while they’re still warm, and don’t leave them out for more than 2 hours.
  • Store: Put leftovers in an airtight container to store in the fridge for 2-3 days. To reheat, preheat your oven to 300 degrees, place them in a single layer on a baking sheet, and put them in the oven for 10 minutes.
  • Freeze: Seal in a freezer bag and keep them frozen for up to 3 months. Putting parchment paper between each waffle will stop the swirls of cinnamon sugar from sticking together. To reheat, use the oven method listed above. However, it will take a bit longer than 10 minutes to heat so keep an eye on them.

Variations

  • Flavored icing: Add some extra flavor to the original icing recipe. Mix in a ½ teaspoon of ground cinnamon for cinnamon cream cheese icing. Make it citrusy by adding 1 teaspoon of orange zest, and 1 tablespoon of orange juice, but make sure to reduce the milk to 2-3 tablespoons for the right consistency. Or mix in real maple syrup with the icing for a maple cream cheese glaze.
  • Mix-ins: Whisk in chopped nuts like pecans, walnuts, or almonds to change up the texture. Add toffee bits or cinnamon chips to add to the cinnamon roll flavor.
