Chef’s Note

Take your time when adding the warm milk mixture to the egg yolks. Pouring it in a very thin stream while whisking constantly will help gradually warm up the eggs without scrambling. Keep the heat gentle when returning to the saucepan, and ensure it reaches a temperature of 160 degrees.

Can this be made ahead of time?

This recipe can be made up to 2 days in advance, but wait to add the bourbon until you’re ready to serve. The texture might thicken slightly during refrigeration, so give it a stir or whisk to get it back to its smooth consistency.

How to Store

  • Serve: Don’t leave this sitting at room temperature for more than 2 hours, or it will go bad.
  • Store: If you have leftovers, cover the glasses or pour the cooled mixture into an airtight container to store in the fridge for 3-4 days.
  • Freeze: You can freeze this for up to 2 months. Leave room at the top of the airtight container so that the mixture can expand when frozen. Thaw and mix the cocktail before serving.

Slow Cooker Method

  • Prep ingredients: Whisk together the egg yolks and sugar in a mixing bowl. You can melt the ice cream and mix it with the whole milk, or swap out the ice cream for heavy cream and whisk the two ingredients together.
  • Combine: Add the egg mixture to the crockpot. Then pour the milk mixture in slowly, whisking as you go.
  • Cooking time: Turn the slow cooker to low heat, cover, and cook for 2 hours. Come back to stir the mixture once every 15-20 minutes so that it doesn’t boil, and ensure the beverage reaches 160 degrees since it is an egg based drink. Once it has reached temperature, turn off slow cooker, and let it cool for 20 minutes before serving.
  • Serve: Add ice and bourbon to cocktail glasses, and ladle the eggnog over the top. Finish with nutmeg to garnish, and enjoy.
