Ingredients
 

  • 2 tablespoons vegetable oil
  • 1 yellow onion , chopped
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 1 tablespoon fresh thyme , removed from sprigs
  • 2 cloves garlic , minced
  • 2 carrots , chopped
  • 3 yukon potatoes , chopped
  • 3 stalks celery , sliced
  • 29 ounces pinto beans , drained and rinsed
  • 1 ham bone , with leftover meat on it
  • 8 cups chicken broth

Instructions

  • To a large pot add the vegetable oil on medium-high heat.
  • Add the onion, salt, black pepper and thyme, stirring to coat and cook for 5-6 minutes until onions are translucent.
  • Add in the garlic, stir to coat and cook for 30 seconds.
  • Add in the carrots, potatoes, celery, beans, ham bone and chicken broth.
  • Stir well, bring to a boil, then reduce heat to a simmer.
  • Cook, covered for 60-90 minutes.
  • Remove the ham bone, and shred all meat off it with a fork.
  • Add the meat back to the soup.
  • Taste for seasoning, if needed add more salt and pepper.
  • Serve in bowl with crackers or crusty bread.
