Chef’s Note

Cooking the pasta two minutes short of the package directions helps them hold their shape with stuffing. Plus, they’ll continue to soften and cook as they bake in the beef broth, giving a nice and tender result.

Can this be made ahead of time?

You can prepare this dish up to 24 hours in advance. Make sure to let it cool for 30 minutes before covering and refrigerating. When ready to serve, cover with foil and reheat at 350 degrees for 30 minutes or until heated through to an internal temperature of 165 degrees. Add a splash of beef broth if the pasta looks dry, and serve with fresh sour cream if desired.

How to Store

  • Serve: Don’t leave at room temperature for more than 2 hours.
  • Store: Once they have cooled, transfer them to an airtight container or cover the baking dish in plastic wrap or tin foil, refrigerated for 3-4 days.
  • Freeze: Cover the shells tightly in plastic wrap followed by tin foil to store in the freezer. for about 3 months.

Variations

  • Cheese: Add other types of cheese like cheddar, provolone, gouda, parmesan, or asiago cheese to go along with the mozzarella.
  • Seasonings: Sprinkle some of your favorite herbs and seasonings over the top. Fresh parsley, oregano, basil, thyme, black pepper, paprika, or red pepper flakes make great additions.
  • Meat: If you’re looking for ways to make a lighter meal, use lean ground beef, or ground turkey. Ground turkey will change the flavor of the entire meal quite a bit, so keep that in mind.
  • Vegetables: Add some additional taste and texture by stirring in your favorite vegetables with the beef. Chopped bell peppers, carrots, frozen peas, or diced tomatoes are all great options.
