Ingredients
- 1 1/2 cups flour
- 1/2 cup unsweetened cocoa powder
- 4 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup sugar
- 5 tablespoons unsalted butter , melted
- 1 cup whole milk
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup mini chocolate chips
Instructions
- Preheat waffle iron to medium heat.
- Sift the flour, unsweetened cocoa powder, baking powder, baking soda, salt and sugar twice into a large bowl.
- In a medium bowl whisk together butter, milk, eggs and vanilla extract until smooth.
- Add in flour mixture and mini chocolate chips and whisk until just combined.
- Let sit for 5 minutes.
- Scoop batter onto lightly buttered waffle iron on medium heat and cook until ready light goes off and waffles are browned and crispy.

The secret to good waffles is a hot waffle iron, and letting the batter rest for a few minutes. Letting the batter rest allows the baking soda and baking powder to activate for fluffy, light waffles.

Can this be made ahead of time?
You can prepare and cook these, then refrigerate or freeze for later. You do want to cook the batter within about 20-30 minutes of preparing it though. Freeze cooked waffles on a baking sheet for an hour, then transfer to an airtight container. These can be frozen for up to 5 months. Reheat from frozen in the oven, toaster oven, or large toaster until heated through.
How to Store
- Store: Leftovers can be stored in an airtight container, or plastic bag in the refrigerator for up to 3 days. Cool first to prevent steam and moisture so they don’t get soggy.
- Reheat: To reheat, simply place in a toaster or oven until they are warm and crispy.
- Freeze: If you want to freeze waffles, place them in a single layer on a baking sheet and freeze until solid. Once frozen, transfer the waffles to a freezer-safe bag or container and store in the freezer for up to 5 months.
Variations
- Chunky Monkey: Stir in ½ cup of chopped walnuts and ½ cup of sliced bananas into the batter before cooking the waffles. This will create a sweet and nutty treat that is reminiscent of the classic ice cream flavor.
- Mint Chocolate: Stir in 1 teaspoon of mint extract into the batter for a fresh and minty flavor. Top the waffles with a drizzle of chocolate syrup and a sprinkle of crushed peppermint candies for a festive touch.
