Ingredients
 

  • 4 fillets snapper , skin on
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 1/4 cup flour
  • 1/3 cup unsalted butter
  • 3 cloves garlic , minced
  • 1/2 cup white wine
  • 2 tablespoons parsley , minced

Instructions

  • Season snapper with salt and pepper.
  • Dredge snapper in flour, pat away excess flour.
  • Add butter to a large skillet on medium high heat.
  • Add fish, skin side down, and cook for 4 minutes, then flip and cook for 2 minutes.
  • Remove from the pan, add garlic and white wine.
  • Cook 2 minutes, or until reduced by half.
  • Add fish back to the pan, top with parsley and serve.

Chef’s Note

This recipe calls for skin-on snapper fillets. I highly recommend keeping the skin on as it crisps up beautifully during cooking. The skin adds to the texture, flavor, and helps keep the fillet from drying out. However, you can remove the skin if you prefer. 

Can this be made ahead of time?

Yes, you can store the cooked fish in the fridge for 3 days, or the freezer for 3 months. When you’re ready to serve, preheat your oven to 275 degrees and line a rimmed baking sheet with aluminum foil. Place the fish fillets in a single layer on the baking pan and put them in the oven until heated through. This will take about 15 minutes for frozen fish, and 10 minutes or less for fish you kept in the fridge. Prepare more wine sauce to serve on top. 

How to Store

  • Serve: Don’t leave at room temperature for more than two hours, or it can start to go bad. 
  • Store: To keep fresh, wait for it to cool, then transfer the fillets to an airtight container to store in the fridge for 3-4 days. 
  • Freeze: To keep longer, store in a freezer bag and keep the recipe frozen for up to 3 months. 

Air Fryer Method

  • Season and bread the fish fillets according to the original recipe instructions. 
  • Spray the air fryer basket with a light coating of oil. 
  • Then place snapper fillets in a single layer skin side down, and don’t overcrowd the basket. 
  • Air fry at 375 degrees for 7 minutes. Then cook the next batch to finish. 
  • Prepare the wine sauce on the stovetop while you air fry the fish.
