Split Pea Soup is a simple, easy recipe, but tastes so amazing you won’t believe how good it is. This is a creamy soup made without any heavy cream. Instead the peas naturally thicken the broth to give it that silky, smooth texture. This soup is an elegant starter for your Thanksgiving dinner, but also casual enough for a dinner with Grilled Cheese Sandwiches.

Ingredients
 

  • 1 pound green dried split peas
  • 8 cups chicken broth
  • 1 ham bone with meat , or smoked ham hock
  • 1 yellow onion , finely diced
  • 2 stalks celery , finely diced
  • 2 carrots , finely diced
  • 2 russet potatoes , peeled and finely diced
  • 2 cups water
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 1/2 teaspoon dried thyme

Instructions

  • Soak the split peas overnight in a tub of water.
  • Rinse well.
  • Add the chicken broth and ham bone to a large dutch oven and bring to a simmer on medium heat.
  • Cover and simmer on medium-low heat for 1 hour.
  • Remove the ham bone and shred meat. Return meat to pot.
  • Add in peas, onion, celery, carrots, potato, water, kosher salt, black pepper and thyme.
  • Cover and simmer for 90 minutes until thickened.
