Chef’s Note

Flipping the dates halfway through is an important step, so don’t skip it. By turning each piece, you’re ensuring it to brown evenly, and it will make your bacon crisp.

Can this be made ahead of time?

For the best results, I’d bake right before serving. However, you can follow the directions and assemble the appetizer up until the baking step. Once put together, arrange them in a covered container and refrigerate until you’re ready to bake. They may need a few extra minutes of baking time coming straight from the cold of the refrigerator so pay attention.

How to Store

  • Serve: After cooking, serve this recipe immediately, and don’t leave these sitting out at room temperature for more than 2 hours.
  • Store: To keep leftovers fresh for later, wait for them to cool. Cover the dish in plastic wrap, or transfer them to an airtight container to refrigerate for 3-4 days. To reheat, preheat your oven to 350 degrees. Place on a parchment-lined baking sheet, and bake for 8-10 minutes or until heated through.

Variations

  • Candied Bacon: For a sweeter twist on this recipe, prepare these with a sweet coating. Press some brown sugar onto the bacon, or brush the meat with maple syrup. As the recipe bakes, it creates a delicious candied outside.
  • Nuts: instead of the goat cheese filling, stuff with almonds, pecans, pistachios, or hazelnuts.
  • Cheese: Replace the goat cheese with another option, soft cheeses like blue cheese, feta, cream cheese, Boursin or brie would make fantastic substitutions.
