Ingredients
 

  • 1 large egg
  • 1 cup whole milk
  • 1/3 cup vegetable oil
  • 2 tablespoons sugar
  • 2 cups flour
  • 1 cup whole wheat flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup cheddar cheese , shredded

Instructions

  • Preheat oven to 350 degrees and spray a 9×5 loaf pan with baking spray.
  • In a large bowl whisk together the egg, milk, oil, and sugar.
  • Sift together the flour, whole wheat flour, baking powder, and salt.
  • Add to the wet ingredients and whisk until just combined.
  • Stir in the shredded cheddar.
  • Pour into loaf pan and bake for 50-55 minutes until a toothpick comes out clean.
  • Let cool 10 minutes before removing from pan.
  • Cool completely before slicing.

Once you add the dry ingredients, mix the batter just until everything comes together. Over-mixing can develop too much gluten, and will leave your loaf dense or tough, instead of soft or tender. Sifting dry ingredients to remove lumps can make it easy to mix without over-working the dough.

Can this be made ahead of time?

For the best texture, bake up to 1 day in advance. Let the loaf cool completely before wrapping tightly in plastic wrap, or storing in an airtight container at room temperature.

How to Store

  • Serve: Let cool completely before slicing with a serrated knife and serving. Don’t leave it sitting out for more than 2 hours or it will dry out. 
  • Store: To keep fresh, double-wrap in plastic wrap, or put slices in an airtight container. Due to the cheese in the recipe, it can only stay at room temperature for 2 days maximum. It can stay good for 3-4 days if kept in the refrigerator. 
  • Freeze: To freeze, wrap it carefully, then put it in a gallon freezer bag to store for up to 3 months. To thaw, put it on the countertop for 1-3 hours.

I opted for cheddar cheese in this recipe. It has a buttery, melty texture and a familiar sharp, but nutty flavor. Depending on your preference, you can opt for mild, medium, or sharp cheddar. You can also experiment with other varieties of cheese like pepper Jack, Monterey Jack, provolone, gouda, or Swiss.

What makes this quick bread?

The leavening agent is what sets quick bread recipes apart from other bread recipes. While traditional bread uses yeast to make the bread rise, quick bread uses baking powder or baking soda.
