Sabrina’s Flatbread Pizza Recipe
Flatbread Pizza is perfect if you prefer thinner slices. Because this dough is unleavened, it only needs to rest for 15 minutes. Not only is this delicious, but making these from scratch can be a fun family activity. Add the toppings listed in the recipe, or read the Variations section to come up with some ideas of your own. Ingredients
Flatbread:
- 3 1/4 cups flour
- 1 tablespoon baking powder
- 2 teaspoons kosher salt
- 1 teaspoon garlic powder
- 1/4 cup olive oil
- 1 cup ice water
To Finish Flatbreads:
- 1/4 cup olive oil
- 2 teaspoons kosher salt , optional
Pizza Toppings:
- 1 cup pizza sauce
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic salt
- 1/4 teaspoon red pepper flakes , optional
- 2 cups shredded mozzarella cheese
- 1/2 cup pepperoni slices
- 1/2 cup shredded parmesan cheese
- 1/4 cup fresh basil , thinly sliced
Instructions
Flatbread:
- Add flour, baking powder, salt, and garlic powder to a large bowl.
- Mix well, then add in oil and ice water.
- Whisk well to combine.
- Cover bowl with clean kitchen towel and let rest for 15 minutes.
- Roll into 24 evenly sized balls.
- Roll the balls on a lightly floured surface and knead for 10 seconds.
- Roll out with a rolling pin about 1/4″ thick.
- Brush with olive oil lightly, and in a large heavy pan at medium-high heat, cook flatbread for 1 minute on the first side and about 20 seconds on the second side.
Pizza:
- Preheat oven to 425 degrees.
- Mix the olive oil, Italian seasoning, garlic salt, and red pepper flakes (if using) then brush it onto the bread.
- Top with a thin layer of pizza sauce.
- Cover with mozzarella cheese and pepperoni and bake until crispy, about 10-15 minutes, checking at the 10 minute mark for melted/bubbling cheese and a crisp brown crust.
- Garnish with Parmesan cheese and fresh basil.

Sabrina’s Tips
Because of the thinness of the bread in this recipe, I use a lighter hand when adding the toppings. Overloading the flatbread will keep the pizza from having a crisp crust, and will ultimately make picking it up by hand a bit difficult.

Can this be made ahead of time?
You can prepare the flatbread recipe in advance and store in the fridge for up to 5 days. Then when you’re ready to make, add the tasty toppings and bake. You can also keep the pizza frozen for 2 months, then reheat it in the oven before serving.
How to Store
- Serve: Serve your pizza recipe warm, and don’t leave sitting at room temperature for more than 2 hours.
- Store: Wait for it to cool. Then place leftovers in an airtight container, and keep in the fridge for 3-5 days.
- Freeze: You can also put the pizza in a freezer bag and store it for up to 2 months. Place frozen on baking sheets to reheat in the oven.
Variations
- Fresh vegetable toppings: Sliced cherry tomatoes, black olives, artichoke hearts, bell peppers, mushrooms, spinach leaves, fresh arugula, or red onion would taste amazing with this recipe.
- Balsamic glaze: Make an easy balsamic glaze to drizzle over this pizza recipe. To make, use 1 ½ cups of balsamic vinegar and 1 ½ tablespoons of honey. Add the balsamic vinegar and honey to a small saucepan over medium-high heat. Bring the mixture to a boil, then lower the heat to continue to simmer for 20-30 minutes or until the glaze is reduced.
- White pizza: Instead of the classic tomato sauce, simply spread a thin layer of creamy Alfredo Sauce over the crust.
- Seasonings: Use fresh herbs and spices like fresh oregano, thyme, black pepper, and smoked paprika to the top of your homemade pizza recipe.
- Meat and cheese: Add different kinds of meat like Italian sausage, Canadian bacon, Buffalo chicken, ham, or bacon. You can also different cheeses like sharp cheddar, fresh mozzarella, pepper Jack, or crumbled blue cheese.
