Prepping meat recipes in a homemade marinade is an easy way to add extra flavor, and also tenderize the meat. It only takes a few minutes to whisk together the simple ingredients for this Pork Chop Marinade, and I’ve listed tips below on how to get the best results as well. You can use the outdoor grill, or grill pan to cook until wonderfully crisp on the outside, and juicy on the inside. Finally, serve with a side of Mac and Cheese and Southern Baked Beans for the ultimate Weeknight Dinner

Ingredients
 

  • 2 teaspoons Kosher salt
  • 1 teaspoon coarse ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground paprika
  • 1 tablespoon light brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon vegetable oil
  • 4 bone-in pork chops , 1 inch thick

Instructions

Marinade:

  • Mix all the ingredients together in a bowl.
  • Add pork to the marinade, toss to coat.
  • Refrigerate for 30 minutes up to 8 hours.

Cooking:

  • Remove the meat from the marinade and allow excess liquid to drip off.
  • On a grill or grill pan on medium-high heat, grill the chops until no longer pink inside, about 6-8 minutes per side or until the internal temperature of the pork has reached 145 degrees.

If you want to marinate and tenderize the meat more quickly, you can add 1 tbsp apple cider vinegar or another acidic ingredient to the marinade. Also, this marinade works for other cuts of meat like pork tenderloin, pork loin chops, or pork ribs. 

Can this be made ahead of time?

For an easy meal prep, you can mix the ingredients ahead of time. Then add the mixture to an airtight container to keep in the fridge or freezer until you’re ready to add the meat to marinate. 

How to Store Pork Chop Marinade

  • Store: If you have any leftovers, you can keep the grilled chops in the fridge for 3-4 days. Let the meat completely cool, then place in an airtight container to keep them sealed in storage. 
  • Reheat: To reheat the recipe, preheat the oven to 350 degrees. Place in a single layer on a baking sheet. Additionally, add a little chicken broth or excess marinade to the bottom of the pan to help maintain moisture and flavor. Heat in the oven for 10-15 minutes. 
  • Freeze: You can also freeze this recipe after grilling. Wait for the leftovers to cool, then place the meat in a freezer bag or another airtight, freezer-safe container to keep frozen for up to 3 months. 

Tips & Tricks

Follow these tips to take full advantage of the marinade and make tender, flavorful pork chops.

  1. Blend ingredients well
    • Carefully whisk together the marinade ingredients before adding the meat to the mixture. That way, you can make sure the sugar and spices are well incorporated into the oil, which will carry those flavors throughout. 
  2. Allow plenty of marinating time
    • If you’re in a hurry to get dinner on the grill, you can marinate for 30 minutes before cooking. This short time will make a flavor impact. However, it won’t be as delicious and juicy as if it were sitting for a few hours. Start in the morning to marinate for a full 8 hours for best results.
