Chef’s Note

For the best results, add sauce at the end of cooking, once your vegetables and meat are nearly done. It only needs a few minutes in the hot pan to warm through, thicken slightly, and coat everything without reducing too much.

Can this be made ahead of time?

This is a fantastically convenient sauce to make ahead of time. Made alone, it can keep in the fridge for up to 2 weeks. Make your stir fry as usual, and then add the sauce in the last few minutes to heat up and evenly coat.

How to Store

  • Serve: Don’t leave this dish at room temperature for more than 2 hours.
  • Store: Keep the stir fry in an airtight container and store it in the fridge for 3-4 days. Or if you want to store the sauce before adding it to a stir fry, it can keep in the fridge for 2 weeks.
  • Freeze: Put the stir fry in an air-tight container to store in the freezer for up to 2 weeks.

Variations

  • Spices: Try mixing in white pepper, cloves, star anise, or Sichuan peppercorns. Make the dish even spicier with cayenne pepper.
  • Brown sugar: For a darker, and richer sweet flavor you can replace the regular white sugar in the recipe with brown sugar.
  • Ramen Noodles: Use this sauce in a ramen noodle stir fry. Use the same veggies that I’ve recommended, and add ramen noodles to go along with them. Finally, toss in some protein like chicken or beef for a well rounded meal.
  • Vegetarian: Replace the chicken broth with vegetable broth. Then cook up your favorite veggies like snap peas, green beans, peppers, carrots, broccoli, bean sprouts, and water chestnuts. Mix in the sauce and add some tofu for protein.
