Breakfast Pizza is a fun way to turn a classic morning meal into something fun and different. The crisp homemade crust holds plenty of hearty toppings for a satisfying combination of flavor and texture. And you don’t have to stick with the toppings listed in the Recipe Card, you can give the Variations below a spin! With each slice you’ll be glad you gave this twist on breakfast a try. It is time consuming to make the Dough, however, you can make it the night before, and store it in the fridge. Whip up some Fruit Salad and Cold Brew Coffee for the perfect morning meal.

Ingredients
 

Pizza Dough:

  • 1 cup warm water , (110 degrees)
  • 1 teaspoon sugar
  • 2 1/4 teaspoons active dry yeast , 1 packet
  • 2 1/2 cups bread flour
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon garlic powder

To Make Pizza:

  • 2 tablespoons flour
  • 1 tablespoon unsalted butter
  • 8 large eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon coarse ground black pepper
  • 1 1/2 cups cheddar cheese , shredded
  • 1/2 pound breakfast sausage , cooked and crumbled
  • 6 slices bacon , cooked and chopped
  • 2 tablespoons cornmeal

Instructions

Pizza Dough:

  • In a stand mixer mix the water, sugar and yeast together and let it sit for 10 minutes.
  • Add in the flour, oil, salt and garlic powder and whisk together on medium speed until well combined, then swap out for the dough hook and let it knead for 5 minutes on medium speed.
  • Remove the dough hook and let it rest, covered with a damp clean towel for 30 minutes before using.

To Make the Pizza:

  • Heat the oven to 425 degrees.
  • Roll the pizza dough out to 1/2" inch thickness, using the 2 tablespoons flour to make a floured countertop or cutting board about 12" across.
  • Add cornmeal to a 12″ pizza pan and add the pizza dough.
  • Add the butter to a large skillet.
  • Beat the eggs, salt, and pepper in a small bowl then add the eggs to your skillet on medium heat.
  • Cook until just set but a little wet still, stirring occasionally.
  • Layer the pizza (except for the outer 1″ ring) with the cheddar cheese, eggs, sausage and bacon.
  • Bake for 13-15 minutes until the cheese is browned and bubbling and the crust is golden brown.

Chef’s Note

I don’t like to fully cook the scrambled eggs before adding to the pizza. I make sure they’re set, but still a little wet. This ensures they won’t get dry or rubbery as they continue to cook in the oven.

Can this be made ahead of time?

You can prepare the dough up to 24 hours ahead, and let it rise while covered, slowly in the refrigerator. When you’re ready to bake. punch down the dough before rolling. You can also prepare the sausage and bacon up to 2 days in advance, and store it separately in airtight containers.

How to Store

  • Serve: Don’t leave out at room temperature for more than 2 hours after baking. 
  • Store: You can wrap leftovers in plastic wrap or aluminum foil to store it in the fridge for up to 3 days. 
  • Freeze: You could also carefully wrap cooled slices in foil, then place in a freezer bag to store in the freezer for up to 3 months. To reheat, unwrap the slices and place them in a single layer on the baking sheet. Preheat the oven to 400 degrees, then heat for 10-15 minutes. 

Variations

  • Cheese: Add different kinds of cheese to your recipe. Mozzarella cheese, Pepper Jack, gorgonzola, muenster, provolone, Monterey Jack, or gouda would taste incredible.
  • Tomatoes: Include tomatoes in the toppings. Add halved cherry or Roma tomatoes with the other toppings. 
  • Veggies: Red or orange bell peppers, sliced mushrooms, spinach, chopped onions, or squash would all taste fantastic. Cook hash browns separately and add them to the top of the pizza before serving. 
  • Meat: For other types of meat, layer on diced ham, chorizo, or Canadian bacon. If you want to reduce your sodium intake, swap out the bacon and sausage for turkey bacon and turkey sausage, which are slightly healthier alternatives.
