Chef’s Note

Crostini should be toasted and crisp, but not hard. The ideal texture is a crunchy outer layer with a slightly softer center. Drizzling olive oil over the slices before baking works as a barrier to moisture and keeps the recipe nicely crisp. Also, keep an eye on your bread slices in the last few minutes of baking. At 450 degrees, they can go from lightly browned to overly browned quickly.

Can this be made ahead of time?

For the best texture and freshness, you can make these up to 2 days in advance. Prepare as directed, then cool completely before storing in an airtight container at room temperature.

How to Store

  • Serve: Let these cool before serving with dip or toppings.
  • Store: Cool completely, then place in an airtight container and keep at room temperature for up to 5 days.
  • Freeze: Freeze this recipe for up to 1 month. To thaw the bread slices, place them in a single layer on a baking sheet, and preheat your oven to 400 degrees. Bake until warmed through.

Ideas to Serve

After toasting in the oven, serve the crispy bread with toppings and dips of your choice. With many options to choose from, I’ve compiled some popular toppings below to get you started.

  • Caprese topping: If you like Fresh Caprese Salad, you can add the same flavors by layering fresh mozzarella, sliced tomatoes or cherry tomatoes, and fresh basil over each piece of Crostini.
  • Salmon: Add smoked salmon with dill sauce, and also a spritz of fresh lemon juice.
  • Fruit topping: Spread cream cheese over the toast, then drizzle on honey, and add fresh fruit like sliced apples, pears, blueberries, strawberries, raspberries, or blackberries for a sweeter option.
  • Avocado: Make mini avocado toast by smashing fresh avocado on top, seasoning, and adding bacon bits and any other toppings you like.
  • Charcuterie: Put out with a cheese platter or charcuterie board. Serve a variety of soft and sliced cheeses, and cured meats.
