Chef’s Note

I keep an eye on my oven in the last few minutes of baking. The sugar coating can go from beautifully caramelized to too dark pretty quickly. Once it’s out of the oven, the coating will firm up a bit more as it cools.

Can this be made ahead of time?

This recipe has the best texture and taste when made fresh, so I don’t recommend making it in advance.

How to Store

  • Serve: Enjoy while it’s still warm, and don’t leave this out for more than 2 hours.
  • Store: To keep in the fridge, put paper towels at the bottom of an airtight container. It can stay good for 3-4 days. When reheating, preheat your oven to 350 degrees, and arrange the pieces in a single layer on a foil lined baking sheet. Bake uncovered for about 5-8 minutes, or until warmed through. Keep an eye on the coating so it doesn’t become too dark.
  • Freeze: You can also seal in an airtight container to freeze for up to 4 months.

Variations

  • Spicy: Add ¼ teaspoon of ground cayenne to the mixture for a sweet and spicy finish.
  • Cinnamon: Add ½ teaspoon ground cinnamon to the mixture for a warm and cozy flavor that’s especially good for holiday breakfasts or brunches.
  • Maple Black Pepper: Add ½ teaspoon freshly cracked black pepper to the mixture, and replace the corn syrup with maple syrup. The maple won’t harden up as much as the corn syrup, but it’ll still create a delicious coating.
  • Nuts: If you don’t want to use pecans, you can try minced almonds, walnuts, or hazelnuts instead.
