Ingredients
- 4 tablespoons unsalted butter
- 1 pound chanterelle mushrooms , sliced
- 2 teaspoons dried thyme
- 1 teaspoon kosher salt
- 1/4 teaspoon coarse ground black pepper
- 3 cloves garlic , finely minced
- 1/2 cup white wine
- 1/2 cup heavy cream
- 1/2 cup Parmesan cheese , shredded
Instructions
- Add butter to a large heavy skillet on medium high heat.
- Add the mushrooms, stir and cook for 8-10 minutes until caramelized.
- Season with thyme, salt and pepper and stir.
- Add in garlic, cook for 30 seconds until fragrant.
- Add in white wine, stir to deglaze with a wooden spoon scraping any stuck bits to the pan.
- Cook for 2 minutes until wine is mostly cooked down.
- Add in heavy cream and Parmesan cheese, stirring well to combine.
- Serve with additional cheese if desired.
