Sabrina’s Cheesy Potatoes Recipe

If you are craving comfort food for dinner, you are going to love these cheesy, creamy delicious potatoes. Cheesy Potatoes are similar to Funeral Potatoes, but with a little bit more prep work. Instead of frozen potatoes, these are made with fresh diced potatoes. A crispy, crunchy potato chip topping rounds out the recipe adding a little texture to the creamy, cheesy filling. They serve a crowd too, so they are truly the ultimate potluck side dish!

Cheesy Potatoes

Ingredients
 

  • 6 cups russet potatoes , peeled and diced into 1/2" cubes (Yukon Gold are good too)
  • 2 cups sour cream
  • 1 can cream of chicken soup , 10.5 ounces
  • 8 tablespoons unsalted butter , melted
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika

Topping:

  • 2 cups cheddar cheese , shredded
  • 3 cups plain potato chips , crushed
  • 4 tablespoons unsalted butter , melted

Instructions

  • Preheat oven to 350 degrees.
  • To a large bowl add the potatoes, sour cream, cream of chicken, melted butter, salt, black pepper, pepper, garlic powder, onion powder and paprika.
  • Stir well to combine the ingredients, then spread them into a greased 9×13" baking pan.
  • Top with the cheese, potato chips and drizzle over the melted butter.
  • Bake for 45-50 minutes, uncovered.
