Mint Chocolate Chip Brookies Recipe

Mint Chocolate Chip Brookies are a delicious combination of mint chocolate chip cookies and dark chocolate brownies with a thin mint taste!

Ingredients
 

For the Brownie Base:

  • 3/4 cup unsalted butter , melted
  • 2 1/4 cups white sugar
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 3/4 cup unsweetened cocoa powder
  • 3/4 teaspoon salt
  • 1 1/4 cups all-purpose flour
  • 3/4 cup dark chocolate chips

For the Mint Chocolate Chip Cookie Layer:

  • 1 cup butter , softened
  • 1 1/2 cups sugar
  • 3 large eggs
  • 1 teaspoon mint extract
  • 10 drops green food coloring
  • 3 1/4 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 12 ounces dark chocolate chips , (1 bag)

Instructions

  • Preheat oven to 350 degrees.
  • Grease or use baking spray on a 9×13 inch baking pan.
  • In a large bowl or stand mixer add melted butter (let it cool for just a minute or so), sugar, eggs, and vanilla and whisk together until well combined.
  • Add the cocoa powder and salt to the bowl and mix well.
  • Add in the flour and chocolate chips and mix until just combined.
  • Using a spatula, pour into the bottom of your pan and spread. (I scrape out as much as I can so I can just reuse the bowl for the mint chocolate chip layer – yes laziness, but also they are going to be stacked on top of one another anyway, why create more mess?)
  • Bake for 20-25 minutes.
  • Make the second layer while the first layer is baking.
  • Add 1 cup butter, sugar, 3 eggs, mint extract and green food coloring to a stand mixer and mix on high until well blended, for 2-3 minutes.
  • Add the flour, baking powder, baking soda, cream of tartar, salt and dark chocolate and turn the mixer on low, until combined.
  • Using a large spoon or your hands, drop chunks of mint chocolate chip cookie dough gently over the brownie layer.
  • Bake for 25-30 minutes, until the dough is just set and not very jiggly.
  • Cool completely before cutting.

To get an authentic flavor, make sure you use mint extract and not peppermint. Mint extract gives you a smoother, more rounded flavor because it’s typically a blend of different mint oils and pairs better with chocolate in baked goods like brookies, since it won’t overpower the brownie layer or compete with the richness. Using mint extract makes it easier to control the intensity and keeps the overall flavor more balanced and dessert-like.

This isn’t the first brookie I’ve had on the site or the last. I have delicious Oreo Brookies too! The mix of cookie texture and my classic rich dark chocolate brownies is a total win. The flavor and texture combination is a real crowd pleaser.
